This Raitha goes well with Biriyani, Jeera Rice and Plain Parathas

Step 1 - Cooking Brinjals
Ingredients
- Brinjal - 1 cup (cut it lengthwise)
- Small onions - 15 nos
- Oil - 1 tablespoons
- Mustard seeds - 1 teaspoon
- Green chillies - 4
- Curry leaves - little
- Channa / Urad dhalls - 1/2 teaspoon each
- Turmeric - little
- Salt - 1 teaspoon
- Fresh curd - As needed
- Coriander leaves - little for garnishing
Method
Step 1 - Cooking Brinjals
- Heat oil in a kadai and splutter mustard seeds.Season green chillies, curry leaves and dhals
- Add chopped onions and saute it with a pinch of salt and turmeric
- Put brinjal pieces and add salt.Cook till it is soft.You may sprinkle little water while doing so
- Once done cool it
Step - 2 Mixing with curd and Raitha
- Whip the curd in a mixer or churn it manually
- Add the cooked brinjal to it and mix well
- Garnish with chopped coriander leaves
Brinjal Onion Raitha is ready.Serve along with Veg Biriyani, Phulkas and Parathas
