Usually cutlets are made with maida and deep fried in oil.I used multigrain flour instead and shallow fried in dosa tava.
It is healthy too as it requires no or little oil
Ingredients
I. Vegetables
Potatoes - 2
Carrots - 2
Peas - 2 handful
(any other desired veggies of your choice)
Onion - 1 (finely chopped)
II. Spice Powders
Garam Masala - 2 tablespoons
Chilly Powder - 1 tablespoon
Coriander Powder - 1/2 tablespoon
Salt -1 1/2 teaspoons
III. Multigrain Batter
Multigrain flour (Pilsbury or Ashirwaad) - 1/2 cup
Mix the multigrain flour with required amount of water.It should be of dosa batter consistency
IV. Bread Crumbs
Brown Bread - 4 slices
Dry toast the bread slices and allow it to cool.Run in a mixer
Can also use ready made crumbs available in the market
Method
1. Boil the veggies (except onion) with a pinch of turmeric.Peel out potato skin as well as carrot skin.Mash all the veggies together
2. Add the spice powders and salt to the mashed veggies.Mix well.You may taste it at this point to check for the proportion of spiciness and salt.Add more if needed
3. In a kadai heat little oil (around 1 teaspoon) and add the chopped onions and fry till translucent.Alternatively u can avoid oil and boil the chopped onions with little water till it becomes soft
4. Now add the mashed veggies to the onions and mix well.Switch off the stove and allow the veggie mixture to cool
5. Make small balls with these veggies and flatten each ball into a shape of your choice
6. Dip each and every piece into the multigrain batter first and then coat it with the bread crumbs
7. In a pre heated tava put these pieces dipped in multigrain wheat batter and brad crumbs
8. Heat well on both the sides.Add little oil if required.
9. It should become dark brown on both the sides
10. Serve it hot with sauce

1. Can also add 3 or 4 pods of chopped garlic along with the onions
2. Add chopped green chillies if needed
3. Fry it in oil if desired
