Madras Filter Kaapi

As the name indicates "Filter Kaapi/ Coffee" is very popular in Madras (now Chennai) so also in places like Bangalore  Mysore etc
It has an unique "Aroma" that trickles our taste buds. I can keep writing about this but need to pen it in a special blog

I clicked the pics when my MIL made filter coffee this morning


Coffee Filter


The traditional coffee filter consists of two partitions upper and lower
The upper partition has small perforations/holes in it through which the coffee decoction  pours into the lower partition
The lower partition collects the coffee decoction or extract
The upper partition is also provided with percolator which enables the decoction to pour down faster

Place the upper partition over the lower partition.Also insert the percolator in the upper partition if you need the coffee faster



Iam giving you this recipe which yields coffee for two persons.Alter it according to your need



Ingredients

  • Hot Milk - 11/2 cups
  • Sugar - As required

Coffee Decoction / Coffee Extract


  • Filter Coffee Powder - 4 teaspoons
  • Hot Water - around 3/4 cup (rough estimation)

Method

1. Put the coffee powder in the upper portion of the filter and pour hot boiling water into it




2. Slightly tap the upper partition and close it with a lid.
3. After 10 minutes decoction will get collected in the lower partition


4. Now mix the coffee decoction with the milk according to one's preferance
  • Dark Coffee : Mix more than 1/4th cup of decoction with less than 3/4th cup of hot milk.Add 1-2 teaspoons of sugar
  • Light Coffee: Mix less than 1/4th cup of decoction with more than 3/4th cup of hot milk.Add 1-2 teaspoons of sugar
  • Medium Coffee: Mix 1/4th cup of  decoction with 3/4th cup of hot milk. Add 11/2 teaspoons of sugar


5. Hot Coffee / Kaapi is ready

Note

Make sure that the filter is dry before making the coffee decoction.
