Khoya / Mawa Lassi

As the name say this lassi is made using Sugarless Khova / Mawa / Khoya
Best thrist quencher in Summer

Ingredients
  • Thick Fresh Curd - 2 cups
  • Mawa / Khoya / Sugarless Khova - 2 tablespoons
  • Sugar - 2 teaspoons or as required

Method
  • First put crumbled mawa and sugar in the mixer jar
  • Then pour curd and blend it together at medium speed
  • Pour it in tall punjabi glasses and serve

Gulf Special Karak / Kadak / Masala Tea

This is a popular version of Masala Chai in the Middle East which induses the flavour of cardamom (elachi) in thick evaporated milk

Ingredients
Part 1 - Masala / Spices
  • Cloves - 2 nos
  • Cinnamon Stick - small piece
  • Ginger - small piece
  • Cardamom / Elachi - 2nos
Part 2 - For Chai
  • Water - 1 to 1 1/2 cups
  • Tea Powder - 2 teaspoons
  • Cardamom Flavored / Plain Evaporated Milk - 1 small can
  • Sugar - 2 teaspoons (optional)
Method
Step 1
  • Crush the masala items / spices using a mortar and pestle
  • Add it to boiling water and mix well

Step 2 - Karak Chai / Masala Tea
  • Put tea powder and boil well
  • Pour evaporated milk (plain or elachi flavoured)
  • Add sugar now (optional)
  • Allow it to boil for 5 minutes or so
  • Simmer the flame and leave it for 2 to 3 minutes
  • Switch off the stove and leave it closed for few minutes
  • The masala  flavours will get infused in the tea
  • Filter the tea
  • Pour it in individual cups and drink hot

Pista Milk / Pistachio Milk

This is very rich for kids as it provides good energy, Vitamin E and other minerals like Copper,Manganese, Potassium, Calcium, Iron, Magnesium, Zinc, and Selenium
The preparation is very simple and Iam sure kids would relish it



Ingredients
  • Unslated Pistas - 30 nos
  • Milk - 250 ml (1 cup)
  • Condensed Milk - 1/4 cup
Method
  • Soak pistas in little milk for 10 minutes
  • Grind it to a smooth paste and take it out
  • Transfer it into a vessel and add remaining milk and slighly warm it
  • Add condensed milk and switch off the flame
  • Let it come to room temperature.Then refrigerate it for atleast 20 minutes before serving

Carrot Walnut Soup

This is a healthy soup which would be relished by kids as well as adults


Ingredients
  • Baby carrot or normal carrot - 300g
  • Walnuts - handful
  • Salt - 1 teaspoon
  • Pepper powder - as requied
  • Milk - 1 glass
  • Coriander leaves - little
  • Butter - optional (use it for kids)
Use skimmed milk for adults and full cream milk for kids

Method
  • Pressure cook carrot for 3 whistles and let it cool
  • Take the cooked carrots in a mixer jar.Add walnuts and pour water.Grind it to a smooth paste
  • Transfer it to a pan.Add milk, salt and pepper,Boil for 5 minutes
  • Garnish with coriander leaves
  • Top it with butter when serving for kids


Spice it up with more pepper if needed while serving

Kids got bored eating ice cream as such so I prepared this milk shake which they relished very much


Ingredients





Method
  • Take both the items in a blender
  • Grind it in high speed and in pulser mode
Pour it in tall glasses and serve

Mango Pineapple Delight

Enjoy this mango season with this delight.This recipe contains no added sugar only the natural flavour from the fruits which can be relished on a hot summer afternoon


Ingredients
  • Pineapple  cubes - 2 cups
  • Mango Pulp - taken from two riped mangoes
  • Water - very little for grinding


Method
  • Take pineapple cubes in a blender.Grind it 
  • Add the mango pulp and pour very little water
  • Grind it once more
  • Serve it chilled

You may add little sugar while grinding

Strawberry Dates Shake

Got loads of strawberries from a local grocery shop here and simply made an attempt with Dates.Kids enjoyed this drink after coming from school


Ingredients
  • Full Cream Milk - About 2 glasses (boiled and cooled)
  • Fresh Strawberries - 4 nos
  • Dates - 5 nos
  • Cashews - 10
  • Sugar as per the taste

Method
Step 1 - Preparation
  • Deesed dates first
  • Soak dates and cashews in little milk.Chop strawberries

Step 2 - Strawberry Dates Shake
  • Grind the soaked dates and cashews into a smooth paste 
  • Put strawberry pieces, sugar and grind it once more
  • Add milk and run the mixer in pulser mode

Pour it in attractive glasses and serve chilled

Arabian Dates Milk - 350th Post Special

Its been a month since I moved to Al Jubail, Saudi Arabia.This place is known for high quality dates.So for my 350th Post which is a special one I would like to present a "Simple and Healthy Drink" using the Best Dates available here


Ingredients
  • Whole or Skimmed Milk - 300 ml
  • Dates - 5 nos
  • Palm Sugar - 2 teaspoons (optional)

Method
  • Remove the seed from dates.Soak it in little milk for 10 minutes
  • Transfer it into a mixer and grind it
  • Add palm sugar and grind it into smooth
  • Transfer it into a vessel and pour remaining milk
  • Slightly heat it.Just 2 2 minutes would do.Do not boil it
  • Bring it to room temperature and refrigerate it atleast for an hour
  • Serve it chilled

Brownie Milkshake

We bought freshly baked brownies from a local bakery here.Unfortunately my kids refused to have it.So immediately the idea of milk shake came up in my mind
Anyone can do it and relish it


Ingredients
  • Chopped Brownie - 1 cup
  • Boiled and Cooled Milk - 1 mug
Method
  • Take the chopped brownie pieces in a mixer jar
  • Pour milk to it
  • Blend it together
  • Thick Brownie Milkshake is ready

Carrot Lassi

Dedicated to kids who are fussy to eat esp vegetables


Ingredients
  • Carrot - 1 no: (medium sized)
  • Almonds - 5 nos
  • Cashews - 5 nos
  • Palm sugar - 1 tablespoon
  • Fresh Yoghurt - 1 glass
Method
Step 1 - Blanching carrot
  • Peel and cut carrot into small cubes
  • Boil water in a small vessel with a pinch of salt
  • Put chopped carrot pieces in it for a minute and take it out
  • Do not discard the water
Step 2 - Carrot Lassi
  • Grind the carrot pieces in a mixer.Use little water (with which blanching was done)
  • Make sure it becomes smooth
  • Add almonds, cashews and palm sugar.Grind it once more
  • Pour in the curd and run the mixer in pulser mode

Yummy carrot lassi is ready to relish in summer

Red Capsicum and Pumpkin Soup

This soup will be relished by kids and adults as well.Its very delicious and welcoming especially when served hot during winter seasons



Ingredients
  • Olive oil or Butter - 1 tablespoon
  • Garlic - 4 nos
  • Green chillies - 3 nos
  • Black Pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Milk or cream - little
  • Coriander leaves - little
Method
  • Melt butter (for kids) / Heat oil in a pressure pan Saute garlic pods and chillies
  • Add chopped capsicum and fry till it is soft
  • Put pumpkin pieces and saute it
  • Pressure cook for 1 whistle
  • Allow it to cool
  • Grind it smooth in a mixer
  • Transfer it to the pressure pan and add 2 more cups of water
  • Put salt, pepper and slightly boil for 2 minutes
  • Pour milk (for adults) or cream (for kids).Switch off the stove
  • Garnish with coriander leaves
  • Serve hot

Carrot and Dates Smoothie

Thanks to my son who made to experiment this new smoothie.Since he is a poor eater I need to give him vegetable in some form so I came up this new recipe and Thank God he relished it


Ingredients
  • Boiled and cooled milk - 1 glass
  • Carrot - 1 no: (medium sized)
  • Dates - 3 nos 
  • Condensed milk - 2 tablespoons 

Method
Step 1 - Preparation
  • Remove the seed from dates and soak it in warm milk for about 15 minutes
  • Chop carrot into small cubes

Step 2 - Smoothie
  • Grind the soaked dates along with milk
  • Now add chopped carrots and grind it into a smooth paste
  • Pour milk and condensed milk.Run it in pulser mode
Smoothie is ready to serve

Cauliflower and Almonds Soup

This is an exclusive soup recipe which I learnt it from a TV Show..I modified it here and there.
This can be given to both kids as well as adults...Top it with butter while giving it kids
The original version includes corn flour in the soup.I didn't use it
Since cauliflower is made into a paste form kids will not refuse for sure


Ingredients
  • Cauliflower - 15 florets
  • Turmeric - a pinch
  • Almonds / Badam - 30 nos
  • Onion - 1 (finely chopped)
  • Milk - 1 cup + more for grinding
  • Oil / Butter - 2 teaspoons
  • Pepper powder - 1 teaspoon + topping
  • Salt - as needed
  • Slit Almonds - little (for garnishing)

Method
Step 1 - Soaking and Grinding
  • Wash and soak cauliflower florets.Put a pinch of turmeric in it.Leave it for 20 minutes
  • Soak almonds for about 1 hour\.Grind it to a coarse paste using milk
  • In the same jar grind cauliflower.Use the water used for soaking while grinding.It should be a thick paste

Step - 2 Making Soup
  • Heat oil in a sauce pan.Saute cauliflower paste for 5 minutes on a low flame till the raw small goes
  • Take it out and keep it aside
  • In the same pan add some more oil / butter.Saute small onions in it
  • Add the cauliflower paste once again and saute it
  • Now pour badam paste.Add 1/2 cup of water and mix well
  • Add pepper powder and salt.Stir it
  • Pour the remaining milk and just boil it once
  • Transfer it to a serving bowl and garnish with sliced almonds
  • Top it with butter if serving to children
  • Serve it hot / cold
  • Sprinkle more salt / pepper while serving if needed
