Summer Special Mawa / Khoya Kulfi

Its really hot summer now and we would definitely love chilled Desserts.What more one can ask than a Home Made Kulfi
Also look ou for Kesar Pista Mango Kulfi


Ingredients

  • Full Cream Milk - 2L
  • Sugarless Khoya / Mawa - 200g

  • Sugar - 200g
  • Coarsely Powdered Pistas - 1/2 cup
  • Sliced Almonds - few
Method
Step 1 - Boiling Milk
  • Pour milk in a deep bottomed vessel.Boil it

Step 2 - Thickening of Milk
  • Simmer the flame 
  • Put a small coin inside the milk which prevents from over flowing
  • Keep stiring with a ladle
  • After 10 minutes or so you will notice thick cream formation on the top
  • Add sugarless khoya / mawa now and mix well
  • Milk will start reducing after 12 - 15 minutes

Step 3 - Condensing of Milk
  • Keep stiring,  the milk is get condensed
  • Colour will also change from white to pale pink
  • Add sugar and mix till it dissolves
  • Keep cooking till gets further more condensed
  • Also add the powdred pistas and sliced almonds
  • Stir it once and switch off the stove
Step 4 -Freezing
  • Wait till it comes to room temperature
  • Pour little batter in an airtight box and garnish with pistas
  • Again pour another layer of ice cream batter and top it with pistas
  • Cover it tightly with air tight lid and freeze it for 6 hours
Step 5 - Final Product
  • Take the kulfis after 6 hours
  • Before opening the seal / lid run it under tap water and leave for 10 minutes
  • Use a knife to scoop it out / cut into small cubes
  • It will come out well

Khoya / Mawa Lassi

As the name say this lassi is made using Sugarless Khova / Mawa / Khoya
Best thrist quencher in Summer

Ingredients
  • Thick Fresh Curd - 2 cups
  • Mawa / Khoya / Sugarless Khova - 2 tablespoons
  • Sugar - 2 teaspoons or as required

Method
  • First put crumbled mawa and sugar in the mixer jar
  • Then pour curd and blend it together at medium speed
  • Pour it in tall punjabi glasses and serve

Pista Milk / Pistachio Milk

This is very rich for kids as it provides good energy, Vitamin E and other minerals like Copper,Manganese, Potassium, Calcium, Iron, Magnesium, Zinc, and Selenium
The preparation is very simple and Iam sure kids would relish it



Ingredients
  • Unslated Pistas - 30 nos
  • Milk - 250 ml (1 cup)
  • Condensed Milk - 1/4 cup
Method
  • Soak pistas in little milk for 10 minutes
  • Grind it to a smooth paste and take it out
  • Transfer it into a vessel and add remaining milk and slighly warm it
  • Add condensed milk and switch off the flame
  • Let it come to room temperature.Then refrigerate it for atleast 20 minutes before serving

Pineapple Pachadi / Pineapple Raitha - Kerala Style

I remember tasting this in Thekkady last year.Remembering it I got this recipe from my Kerala friend
Lets see the easy recipe


Ingredients
Part 1
  • Pineapple - 2 cups chopped
  • Chilly powder - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Water - 1/2 cup
  • Jaggery  - 1 teaspoon
Part 2 - Grinding
  • Mustard seeds - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Green chilly - 2 nos
(The original recipe includes coconut while grinding but I used for garnishing)


Part 3 - Seasoning
  • Coconut oil - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Methi seeds - 1/2 teaspoon
  • Red chilly - 1
  • Curry leaves - few
Part 4 - Garnish
  • Coconut - 3 tablespoons
  • Whipped curd - 1 bowl

Method
Step 1 - Paste
  • Take the ingredients given under "Part 2".Add little water and grind it to a smooth paste
Step 2 - Cooking Pineapple
  • Take pineapple pieces in a kadai.Add water to immerse.Put chilly powder and salt.Cook till it is soft
  • Add the ground paste and mix well.Cook till the raw smell goes
  • Add jaggery powder and cook for some more time

Step 3 - Seasoning
  • In a separate kadai heat coconut oil and season with mustard, methi, red chilly and curry leaves
  • Pour it over the cooked pineapple and stir well
  • Switch off the stove and garnish it with coconut.Mix it thoroughly
  • Transfer it to another kadai and let it to cool
  • Then add whipped curd.Mix well

Pineapple Pachadi is ready.It goes well with Corn Millet Pesarattu

  • Grind it in high speed and in pulser mode
Pour it in tall glasses and serve

Kesar Pista Mango Kulfi - No Cook Method

Now Summer is at its peak.Lets try to beat the heat with this mouth watering dessert


Ingredients
  • Full Cream Milk - 1 L
  • Condensed Milk - 1 tin
  • Milk Powder - same quantity as condensed milk
  • Mango Pulp - from 2 mangoes
  • Pistas - 1/2 cup (finely chopped)
  • Kesar - few strands
  • Elachi Powder - a pinch

Method
Step 1 - Preparation of Kulfi Batter
  • Scoop out the mango pulp and put it in a mixer.Grind it to a smooth paste
  • Add milk powder and condensed milk to it.Blend it well in d mixer
  • Transfer it a broad vessel
  • Pour milk and add elachi powder, few saffron strands.Whisk it well
  • Pulse this mix in a mixer jar in 2 batches
  • It will become uniform
Step 2 - Setting in Moulds and Refrigerate
  • Now the ice cream mix / batter is ready
  • You can use a Kulfi Mould or an ordinary tumbler to set it
  • I used stainless steel / plastic tumblers to set it
  • Pour the prepared batter in the tumblers
  • Garnish with pistas and seal it with an alumium foil
  • Alternatively you can set in air tight boxes
  • Pour little batter in an airtight box and garnish with pistas
  • Again pour another layer of ice cream batter and top it with pistas
  • Cover it tightly with air tight lid and freeze it for 6 hours

Step 3 - Final Product
  • Take the kulfis after 6 hours
  • Before opening the seal / lid run it under tap water
  • Use a knife to scoop it out
  • It will come out well

Murungakkai, Kathrikai and Maanga Sambar / Drumstick, Brinjal and Raw Mango Sambar

This is special sambar variety made especially during summer,No need to add tamarind extract here as the sourness in mango is more than enough to incorporate a tangy flavour


Ingredients
  • Drumstick - 2 nos (chopped lengthwise)
  • Brinjal - 5 nos(chopped lengthwise)
  • Mango - 1 n: (cut it into small cubes)
  • Tomato -1 (chop into small cubes)
  • Turmeric - 1 teaspoon
  • Sambar Powder - 2 teaspoons
  • Chilly Powder - 1 teaspoon
  • Salt - 1 1/2 teaspoons
  • Oil - 2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Hing - little
  • Red Chilly - 1 no:
  • Curry leaves - little
  • Cooked and Mashed Toor dal - 1 cup

Method
  • In a kadai heat 1 teaspoon of oil and fry tomatoes in it
  • Now add the cut drumstick and brinjal pieces.Put turmeric and saute for 2 minutes
  • Pour about 1 cup of water and allow it to cook
  • Add the mango pieces and mashed toor dhal.Mix well
  • Put salt, sambar powder and chilly powder.Boil it
  • In a separate kadai pour 1 teaspoon of oil and season with mustard, hing, red chilly and curry leaves
  • Pour the seasonings over cooked sambar
You can serve it with steamed hot rice and potato curry

Yellow Pumpkin Raitha / Manjal Posanikai Thayir Pachadi / Kaddu Ka Raitha

This is an apt recipe for summer that can be served along with Biriyani / Tomato Rice
I tagged kids as well weight watchers.Use Full Fat curd for the former and skimmed curd for the latter

Ingredients
  • Chopped pumpkin - 1 cup
  • Whipped Curd - as needed (use full fat for kids/ skimmed for adults)
  • Salt - 3/4 teaspoon
  • Oil - 1 teaspoon
  • Mustard seeds -1/2 teaspoon
  • Curry leaves - few
  • Red chilly - 2
  • Hing - a pinch
  • Turmeric - a pinch

Method
  • Steam chopped pumpkin for 10 minutes
  • Mash it well and let it cool
  • In a serving bowl put the mashed pumpkin ,Add curd and salt to it
  • In a separate kadai heat oil and splutter with mustard, curry leaves, hing, turmeric and red chilly
  • Pour the seasonings over the raitha. Mix well

Mango Pineapple Delight

Enjoy this mango season with this delight.This recipe contains no added sugar only the natural flavour from the fruits which can be relished on a hot summer afternoon


Ingredients
  • Pineapple  cubes - 2 cups
  • Mango Pulp - taken from two riped mangoes
  • Water - very little for grinding


Method
  • Take pineapple cubes in a blender.Grind it 
  • Add the mango pulp and pour very little water
  • Grind it once more
  • Serve it chilled

You may add little sugar while grinding

Semi Riped Mango Kadi / Khatta Meetha Mango Kadi

Even though its a North Indian side dish I tagged it under "Sambar / Kozhambu" because it looks and tastes like "Mor Kozhambu"

Ingredients
Part 1 - Grinding
  • Mango chunks - 1 cup or little more
  • Curd - 1/2 cup
  • Besan - 1/4 cup
Part 2 - Tadka
  • Cumin seeds - 1/2 teaspoon
  • Green Chilly - 3 or 4 (Slit lengthwise)
  • Red Chilly - 1
  • Hing - 1/2 teaspoon
  • Curry leaves - 4 nos
  • Hing - a small piece
Part 3 - Powders
  • Kashmiri Chilly Powder - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 1/2 teaspoons
Part 4 - Seasoning and Garnish
  • Ghee - 1 teaspoon
  • Methi seeds - 1/2 teaspoon
  • Coriander leaves - little
Method
Step 1 - Grinding
  • In a mixer jar grind mangoes, curd and besan to a thick batter
Step 2 - Tadka and Kadi
  • In a small kadai heat oil and splutter jeera seeds.Saute ginger, green and red chillies.Put hing and curry leaves
  • Pour the ground batter.Was the mixer jar with 1 cup of water and pour it 
  • After 3 minutes put kashmiri chilly powder, turmeric and salt.Mix well
  • Let it boil

Step 3 - Seasoning and Garnishing
  • In a separate kadai melt ghee and add methi seeds, curry leaves
  • Pour it over the kadi and switch off the stove
  • Garnish with chopped coriander leaves

Khatta Meetha Mango Kadi is ready to be served

Strawberry Dates Shake

Got loads of strawberries from a local grocery shop here and simply made an attempt with Dates.Kids enjoyed this drink after coming from school


Ingredients
  • Full Cream Milk - About 2 glasses (boiled and cooled)
  • Fresh Strawberries - 4 nos
  • Dates - 5 nos
  • Cashews - 10
  • Sugar as per the taste

Method
Step 1 - Preparation
  • Deesed dates first
  • Soak dates and cashews in little milk.Chop strawberries

Step 2 - Strawberry Dates Shake
  • Grind the soaked dates and cashews into a smooth paste 
  • Put strawberry pieces, sugar and grind it once more
  • Add milk and run the mixer in pulser mode

Pour it in attractive glasses and serve chilled
