Pineapple Pachadi / Pineapple Raitha - Kerala Style

I remember tasting this in Thekkady last year.Remembering it I got this recipe from my Kerala friend
Lets see the easy recipe


Ingredients
Part 1
  • Pineapple - 2 cups chopped
  • Chilly powder - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Water - 1/2 cup
  • Jaggery  - 1 teaspoon
Part 2 - Grinding
  • Mustard seeds - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Green chilly - 2 nos
(The original recipe includes coconut while grinding but I used for garnishing)


Part 3 - Seasoning
  • Coconut oil - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Methi seeds - 1/2 teaspoon
  • Red chilly - 1
  • Curry leaves - few
Part 4 - Garnish
  • Coconut - 3 tablespoons
  • Whipped curd - 1 bowl

Method
Step 1 - Paste
  • Take the ingredients given under "Part 2".Add little water and grind it to a smooth paste
Step 2 - Cooking Pineapple
  • Take pineapple pieces in a kadai.Add water to immerse.Put chilly powder and salt.Cook till it is soft
  • Add the ground paste and mix well.Cook till the raw smell goes
  • Add jaggery powder and cook for some more time

Step 3 - Seasoning
  • In a separate kadai heat coconut oil and season with mustard, methi, red chilly and curry leaves
  • Pour it over the cooked pineapple and stir well
  • Switch off the stove and garnish it with coconut.Mix it thoroughly
  • Transfer it to another kadai and let it to cool
  • Then add whipped curd.Mix well

Pineapple Pachadi is ready.It goes well with Corn Millet Pesarattu
