Murungakkai, Kathrikai and Maanga Sambar / Drumstick, Brinjal and Raw Mango Sambar

This is special sambar variety made especially during summer,No need to add tamarind extract here as the sourness in mango is more than enough to incorporate a tangy flavour


Ingredients
  • Drumstick - 2 nos (chopped lengthwise)
  • Brinjal - 5 nos(chopped lengthwise)
  • Mango - 1 n: (cut it into small cubes)
  • Tomato -1 (chop into small cubes)
  • Turmeric - 1 teaspoon
  • Sambar Powder - 2 teaspoons
  • Chilly Powder - 1 teaspoon
  • Salt - 1 1/2 teaspoons
  • Oil - 2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Hing - little
  • Red Chilly - 1 no:
  • Curry leaves - little
  • Cooked and Mashed Toor dal - 1 cup

Method
  • In a kadai heat 1 teaspoon of oil and fry tomatoes in it
  • Now add the cut drumstick and brinjal pieces.Put turmeric and saute for 2 minutes
  • Pour about 1 cup of water and allow it to cook
  • Add the mango pieces and mashed toor dhal.Mix well
  • Put salt, sambar powder and chilly powder.Boil it
  • In a separate kadai pour 1 teaspoon of oil and season with mustard, hing, red chilly and curry leaves
  • Pour the seasonings over cooked sambar
You can serve it with steamed hot rice and potato curry
