வரகு அரிசி இட்லி தோசை மாவு /Varagu Arisi IDly / Dosai Batter Batter

Varagu / Kodo Millet is very rich in fiber, Iron and other minerals.It is very good for shedding excess pounds too
Making of this Varagu Rice Idly / Dosai Batter is very similar to normal Idly / Dosai Batter

  • Unpolished Varagu Rice - 1 cup 
  • Urad Dhal - 1/4 cup 
  • Methi seeds - 1 teaspoon
  • Varagu / Normal Poha - 1/4 cup 
  • Rock Salt - 1 teaspoon

Step 1 - Soaking
  • Wash and soak Urad dhal for 1 hour.Also put methi seeds in it
  • Wash and soak Varagu Rice for 4 hours
  • Wash and soak poha just for 10 minutes

Step 2 - Grinding
  • First take the soaked urad dhal and methi seeds in the mixer.Add about 1/4 cup of ice cold water
  • Grind it till it is soft and fluffy
  • Transfer it to a big container
  • In the mixer jar add the soaked varagu arisi.Pour about 1/2 cup of cold water.Grind it to a smooth batter
  • Now add the soaked poha and run the mixer once again
  • Now add this to urad dhal batter and mix well
Step 3 - Fermentation
  • Add rock salt and mix well with hand
  • Allow it to ferment overnight
  • You will notice the level of batter would have raised / puffed up
