Capsicum Peanut Curry


Ingredients

Capsicum - 5
Peanut (raw or roasted) - handful
Curry Powder (or) any Masala Powder for that you add while cooking vegetables - 2 teaspoons
Salt - 1 1/4 teaspoons
Oil - 1 teaspoon
Mustard - 1/2 teaspoon
Methi Seeds - little
Urad Dhall - less than 1/2 tesapoon

Method

1. Cut capsicum into small cubes.Sprinkle water and pressure cook for 1 whistle.Keep it aside.Do not discard the water.Drain it separately



2. In a pan heat oil and splutter with mustard seeds, then add methi seeds and urad dhall


3. Now add the boiled capsicum and stir for 2 minutes


4. In the meanwhile dry roast the peanuts (even if it is raw) and remove its skin.You may use microwave for this


5. Add curry powder to capsicum and blend well.Also add salt.Stir fry for 3 minutes.Sprinkle water (drained from pressure cooked capsicum) in between



6. Add the peanuts and mix well


7. Capsicum Peanut curry is ready.Serve it as a side dish with sambar rice, rasam rice etc

Variations


1. Can also saute chopped onions and tomatoes in the beginning and add the pressure cooked capsicum
2. Half boil one potato and peel its skin.Cut it into small cubes and add it after tempering with mustard, methi and dhall.Do not over cook it as it becomes mashy
3. Can also try out 1 and 2 together
