Carrot Rice

This is another easy to recipe.It is an attractive food for kids mainly because of the colour

Ingredients
  • Raw rice - 1 1/2 cups
  • Grated carrot - 2 cups
  • Fresh or frozen peas - 1/2 cup
  • Chopped onion - 1 (optional)
  • Salt - 1 teaspoon
  • Chopped coriander leaves - little
Tempering
  • Oil+Ghee - 3 tablespoons
  • Mustard seeds - 1 teaspoon
  • Urad dhall - 1/2 teaspoon
  • Channa dhall - 3/4 teaspoon
  • Grated ginger - 1/2 teaspoon
  • Green chillies - 4 or more
  • Curry leaves - little
  • Hing - little
Method
  • Cook rice with 3 cups of water for 2 whistles.Spread it in a broad basin and allow it cool.Add little oil on top of it and also mix salt with the rice
  • Heat oil+ghee in a kadai.Add mustard seeds and allow it to splutter.Then add urad dhall followed channa dhall.After the dhall gets reddish brown in colur add rest of the items given under tempering
  • Fry onions till translucent.Add little salt while frying
  • Add peas and stir fry for 2 minutes.Now add grated carrot. Sprinkle little salt and fry for 5 minutes.Add coriander leaves
  • Switch off the stove and leave it for 2 minutes.Add it to the cooked rice and mix well
  • Carrot rice is ready.Serve it hot with fried pappads and onion raitha
Note
  • I mentioned only 1 teaspoon of salt to be added to the cooked rice because it is also added to onions and carrots while frying
  • You may add pinch of turmeric while tampering
