Orange Pine Apple Cake / Tri Fruit Pudding

Long time since I baked.This recipe is my own formulation giving equal weightage to all three fruits mentioned
It involves fresh fruit juices and fresh fruit bits.This cake is especially for kids who refuses to eat fruits



Ingredients and Preparation
Part 1 - Dry Ingredients
  • Wheat - 1 cup + 1 tablespoon
  • Milk powder - 3 tablespoons
  • Corn flour - 4 tablespoons
  • Baking Powder - 1 teaspoon
  • Baking Soda - 1/2 teaspoon

Sift all the ingredients together and keep it aside



Part 2 - Wet Ingredients
  • Condensed Milk - 1/2 tin ie 200g
  • Refined Sunflower Oil - 1/4 cup
  • Orange Marmalade /Jam - 4 tablespoons
  • Orange essence - 1 tsp
  • Pineapple essence - 1 tsp (or you can use vanilla essence also)

In a mixing bowl take oil and condensed milk.Beat it well with a manual beater or a wooden spatula
Now add the orange marmalade and essences.Beat thoroughly for 5 minutes in the same direction


Part 3 - Fruit Juices
  • Orange - 1
  • Pineapple - 3 round slices
  • Apple - 5 thin slices
Squeeze out juice from orange using manual squeezer / juicer


Take apple and pineapple pieces together and grind it to a smooth puree (do not peel apple)


Now mix orange juice to this apple, pineapple puree and keep it aside



Part -4 Garnish
  • Apple and Pineapple pieces (finely chopped) - 2 tablespoons

Method
  • Add sifted flour in batches to the Part - 2 wet ingredients and keep beating it
  • When it becomes tight add the juice little by little and bring it to a dropping batter consistency

  • Now add chopped apple and pineapple pieces and mix well.Add juice if needed
  • Meanwhile grease a microwave safe baking dish
  • Transfer the above cake batter to this greased dish and tap it well
  • Microwave high for 6-8 minutes and dip a tooth pick to see whether the cake is done or not
  • Let it stand for 5 minutes.Invert the cake after 5 minutes
  • Invert it once more.Let it cool and then cut it pieces



Serve with Ice Cream !!!!
