Palak Subji


Got this recipe from a "Cookery Show" and tried it out many a times.Now it has become a part of our weekly diet

Ingredients

Part 1
  • Oil - 1 tablespoon
  • Mustard seeds - 1/2 teaspoon
  • Jeera / cumin seeds - 1/2 teaspoon
  • Green chillies - 2 or 3 (slited)
  • Garlic cloves - 4 (finely chopped)
Part 2
  • Palak- 1 bundle
  • Tomato - 2 (finely chopped)
  • Water - 2 cups
  • Turmeric - 1/2 teaspoon
Part 3
  • Besan - 4 tablespoons
  • Water - 1 cup
  • Salt - 1 teaspoon or as required
Part 4
  • Fresh curd - 1 tablespoon
Method
Step 1
  • Heat oil in a pan and splutter mustard and cumin seeds
  • Throw green chillies and garlic cloves and fry for few seconds in low flame (the raw smell of garlic should go)
Step 2
  • Wash palak and chop into small pieces (do not wash after cutting palak)
  • Add palak and saute for 5 minutes
  • Now put tomato pieces along with turmeric and fry till tomatoes are soft
  • Pour 2 cups of water and let it boil
Step 3
  • Dissolve besan in water without lumps and pour it to the above mixture (use more water if needed)
  • Stir well and put salt.Boil till the raw smell of besan diffuses
Step 4
  • Add a table spoon of curd and give it a boil

Palak Subji is ready.Serve it with Phulkas / Jeera Rice
