I tagged this dish in "Beginners Section" because it is very easy to do...Only chopping the vegetables is time consuming
Ingredients
Pressure cooker
- Vegetables consisitng of carrot, beans, fresh/frozen peas, drumstick, yam, raw banana, yellow pumpkin and ash gourd - 4 cups
- Turmeric powder - 1/2 teaspoon
- Water - little
- Salt - as required
- Cumin seeds / Jeers - 1 teaspoon
- Green chillies - 3 or 4
- Scrapped coconut - 1 to 1 1/2 cups
Topping
- Coconut milk - 2 teaspoons (optional)
- Curry leaves - 10 individual leaves
Step 1
- Cut the vegetables (except peas) length wise
- Put turmeric and salt.Pour little water till the vegetables are soaked and pressure cook them for 3 whistles
- Once the pressure is released filter the vegetables using a strainer and keep the vegetable stock (water from pressure cooked vegetables) aside
Step 2
- Meanwhile grind the mentioned items together without adding water initially
- Then pour little water extracted from vegetables and grind it to a smooth batter
- Mix it with curd and blend well.You may use vegetable stock for mixing
Step 3
- Pour the above mix to the cooked vegetables and slightly heat it
- Switch off the stove and pour coconut oil if desired
- Top it with curry leaves
