Aviyal


I tagged this dish in "Beginners Section" because it is very easy to do...Only chopping the vegetables is time consuming

Ingredients
Pressure cooker
  • Vegetables consisitng of carrot, beans, fresh/frozen peas, drumstick, yam, raw banana, yellow pumpkin and ash gourd -  4 cups
  • Turmeric powder - 1/2 teaspoon
  • Water - little
  • Salt - as required
Grinding
  • Cumin seeds / Jeers - 1 teaspoon
  • Green chillies - 3 or 4
  • Scrapped coconut - 1 to 1 1/2 cups
Curd - 1 cup (I used skimmed curd)
Topping
  • Coconut milk - 2 teaspoons (optional)
  • Curry leaves - 10 individual leaves
Method
Step 1
  • Cut the vegetables (except peas) length wise
  • Put turmeric and salt.Pour little water till the vegetables are soaked and pressure cook them for 3 whistles
  • Once the pressure is released filter the vegetables using a strainer and keep the vegetable stock (water from pressure cooked vegetables) aside

Step 2
  • Meanwhile grind the mentioned items together without adding water initially
  • Then pour little water extracted from vegetables and grind it to a smooth batter
  • Mix it with curd and blend well.You may use vegetable stock for mixing

Step 3
  • Pour the above mix to the cooked vegetables and slightly heat it
Step 4
  • Switch off the stove and pour coconut oil if desired
  • Top it with curry leaves
It goes very well with Adai
