Method
(A small tip for beginners: At this stage pour a spoonful of sweet on a cup and check whether it solidifies within 2 minutes.If it is so then this is the correct stage / consistency.Switch off the stove)

Ingredients
- Milk - 1/2 litre or 4 cups
- Sooji / Rava - 1 cup
- Sugar - 3 or 4 cups (I used only 3 cups)
- Ghee - 1/2 cup
Yield : 38 big pieces
Method
- Dry roast rava in a thick bottomed kadai and keep it aside.The raw smell should disappear and it should emit nice aroma
- Add sugar and pour milk over it.Boil it till the sugar dissolves.Do this in high flame
- Simmer the flame and slowly add the roasted rava by stirring it continously.Make sure no lumps are formed
- Pour ghee after 10 minutes and keep stirring it on a medium flame
- The entire mass will gradually condense /solidify and becomes slight pinkish in colour.Again simmer the flame now
- After sometime you will notice big bubbles and the mixture becoming frothy slowly leaving the sides of the kadai

- Within few minutes the mixture will start becoming porous (poothu varudhu in tamil)
- Switch off the stove and transfer it into a greased plate
- Allow it cool and cut it into small blocks
