Rava Laddu / Laddoo

This is a simple and delightful sweet for Diwali.It can be done in the last minute also.No need to hunt for any special ingredients

Ingredients
  • Sooji / Semolina / Bombay Rava - 1 cup
  • Sugar - 3/4 cup to 1 cup
  • Ghee - 3 tablespoons
  • Cashews - 1 tablespoon


Method
  • Dry roast rava in a kadai for 5 minutes and keep it aside
  • In the same kadai add 1 tablespoon of ghee and fry cashews.Take it out and keep it aside
  • Add little more ghee and fry rava in it just for 3 minutes (since it was previously dry roasted this timing is enough)
  • Transfer it to a broad basin / mixing bowl and allow it to cool
  • Take it in a mixer along with sugar and grind it to a fine powder 
  • Put it in a mixing bowl and the fried cashews.Roughly mix with your fingers
  • Pour the melted ghee and mix well with a spoon.The mixture will look crumbled but it doesn't matter
  • Now shape into round balls/ urundai / laddu with your hands when the ghee is warm.You may sprinkle warm milk while doing so

Lip smacking Rava Laddus are ready.It can be stored upto 3 days at room temperature
