Mixed Vegetable Paratha Version - 1

Paratha is such an interesting recipe if the items are ready it can be done within few minutes.I have given two versions using the same dough.The first version  is "Layered Paratha"for kids using ghee.
This is an healthy option for kids as it uses Methi along with other veggies.The bitter taste of methi is not felt at all
Just 2 parathas will keep the tummy full

Ingredients
Part 1 - Vegetables
  • Methi leaves - 1 bundle 
  • Potato - 2 (medium sized)
  • Carrot - 2 (small sized)
  • Beetroot - 1 (medium sized)
  • Onion - 2 (medium sized)
  • Coriander leaves - little
Chop methi leaves and coriander leaves.Grate the remaining vegetables.See the pic below


Part 2 - Spice Powders and Atta
  • Whole wheat flour / multigrain flour - 1 cup / 200 g + little for dusting
  • Kashmiri chilly powder - 2 teaspoons
  • Garam masala powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin / jeera powder - 1/2 teaspoon
  • Salt - 1 to 1 1/2 teaspoons
Part 3 - Others
  • Water - 1/2 cup or more to knead the dough
  • Ghee - to make parathas
Method
Step 1 - Kneading Dough
  • In a mixing bowl take grated vegetables and wheat flour.Put the mentioned spices and salt

  • Mix well with fingers and knead the dough.Use little water if needed

  • Leave this dough atleast for 1/2 hour
Step 2 - Making Parathas / Paranthas
  • Pluck / pinch out equal sized balls from the dough
  • Heat a tawa
  • Meanwhile take a ball and dust with flour.Roll it out using a rolling pin


  • Spread ghee over it using a bread knife
  • Fold it into two and apply ghee again on the folded layer as shown below
  • Fold into again.It will resemble a small triangle with layers as seen in the pic below
  • Dust it with flour and roll it out again using a rolling pin
  • Transfer into preheated tawa and cook well on both sides using ghee / butter (optional)

  • Once done take it out and serve hot
  • Apply ghee / butter before serving
  • Serve it with Raitha / Plain Curd
