This particular curry involves combo cooking ie in microwave and in stove top.Alternatively it can be done in stove top alone

- Potato - 2 nos (medium sized)
- Carrot - 1 no: (big sized)
- Peas - 1/2 cup
Part 2 - Seasoning
- Oil - 1 tablespoon
- Mustard seeds - 1 teaspoon
- Channa dhal - 1/2 teaspoon
- Green chillies - 2 or 3 (slit it)
Part 3 - Saute
- Peel off potato skin and dice into small cubes
- Chop carrot into small cubes
- Take Part 1 items in "microwave safe bowl" and sprinkle little water
- Microwave for 4 minutes at high power or till it is cooked soft
- Meanwhile heat oil in a kadai.Season mustard seeds, channa dhal and green chillies
- Add chopped onions with a pinch of salt.Saute it till golden brown
- Add chopped capsicum and saute till it is soft
- Now add the microwaved vegetables and swirl it once
- Garnish with kasuri methi or coriander leaves if needed
Simple Mixed Vegetable Curry is ready.Serve along with Mint Garlic Rasam
