This particular Kuzhi Paniyaram is made out of left over "Idly / Dosa" batter.I used store bought batter and mixed with vegetables.So this recipe is very useful for "Beginners"

Part - 1
- Idly / Dosa batter - nearly 1 bowl
- Oil - 1 tablespoon
- Mustard seeds - 1 teaspoon
- Channa dhal - 1/2 teaspoon
- Curry leaves - little (finely chopped)
- Ginger - small piece
- Green chilly - 2 (finely chopped)
- Onion - 1 (finely chopped)
- Capsicum - 1 medium sized (finely chopped)
- Carrot - 1 medium sized (grated)

- Coconut bits - as required
- Chopped coriander leaves - little
- Grated carrot - little (optional)
- Salt - as requied ( be careful while adding salt because leftover batter already contains salt)
- Oil - for cooking
Method
Step -1 - Saute
- In a kadai heat oil and splutter mustard seeds.Now roast channa dhal
- Saute ginger, chillies and curry leaves.Add onions and fry till becomes golden brown.Put a pinch of salt while doing so
- Add finely chopped capsicum and saute till it becomes soft
- Now add carrot and saute till it is done
Step - 2- Mixing
- Add the above sauteed vegetables to the idly / dosa batter and mix well
- Put coconut bits, coriander and mix it again
Step 3 - Making Kuzhi Paniyaram
- Pour the batter using a small ladle / spoon in each and every mold.Put grated carrot over it (only if desired)
- Close the paniyaram pan and wait for 3 minutes
- Flip the paniyaram in each and every mold with the help of the stick / rod (that comes along with paniyaram pan)
- Allow the other side to get cooked.No need to close the pan now.Take it out after 3 minutes
- Now hot Kuzhi Paniyaram is ready.Serve it with Mint Coriander chutney / Coriander Thogayal
