This is an interesting recipe which I learnt from a Cookery Show.The original name is "Rangoli Paratha"

involving 3 colours.Ofcourse I modified it here and there.It was demonstrated with pureed vegetables where as I used grated / chopped vegetables

Ingredients
Green / Palak Layer
- Wheat flour / atta - 1 cup
- Palak - 1 cup (wash palak first and then chop into fine pieces)
- Pickle Powder / Chilly powder - 3/4 teaspoon
- Jeera / Cumin powder - 1/4 teaspoon
- Salt - little
Orange / Carrot Layer
- Wheat flour / atta - 1 cup
- Grated Carrot - 2 nos
- Garam masala powder - 1/2 teaspoon
- Chilly powder - 3/4 teaspoon
- Coriander powder - little
- Salt - little
Maroon / Beet Layer
- Wheat flour / atta - 1 cup
- Grated beetroot - 1 or 2
- Turmeric - little
- Ajwain seeds - little
- Green chilly paste / Chilly Powder - 1/2 teaspoon or more
- Salt - little
Method
Green Layer
- Saute chopped palak with the mentioned spices and salt till the raw smell goes
- Cool and grind it into a puree
- Combine this puree with Atta and make into a roti dough.No need to add water
Orange / Carrot layer
- Grate carrot and run it in mixer
- Add this to Atta and put the spices mentioned and salt
- Knead into a roti dough.No need to add water
Maroon / Beet Layer
- Grate beetroot
- Saute it in a low flame with a pinch of turmeric, green chilly paste / chilly powder, ajwain and salt.You may add 1/2 teaspoon of oil while doing this (I din't)
- Cool and combine with atta flour to make a roti dough
- Now 3 colourful dough's are ready.Let's see Paratha Preparation
