Corn Millet Lemon Rice

Long time since I posted a recipe using Millets
This is a simple dish that can be done using any millet
I used "Corn Millet"


Ingredients
  • Corn Millet - 1 1/2 cups
  • Water - 3 cups
  • Turmeric - 1/2 teaspoon
  • Oil - 2 teaspoons
  • Mustard seeds - 1/2 teaspoon
  • Urad and Channa Dhal - 1/2 teaspoon each
  • Peanuts - 1/4 cup
  • Green chilly - 3 nos (finely chopped)
  • Salt -  1 teaspoon or little more
  • Lemon - 1
  • Curry leaves - little


Method
  • Wash the millet
  • Add 3 cups of water and salt to it.Pressure cook for 3 whistles
  • Spread it in a dish / bowl
  • In a separate kadai heat oil and splutter mustard seeds in it
  • Fry peanuts and curry leaves in it
  • Also add turmeric and hing 
  • Pour it over the cooked millet and mix well
  • Squeeze lemon juice over it
  • Mix thoroughly

Once done serve it hot with any spicy curry
