Tofu (Paneer) in Mixed Vegetable Curry

Again its a healthy side dish because it does not require frying of paneer and also contains mixed vegetables


Ingredients
  • Tofu or Paneer - 100 g
Mash the Paneer with hand or grate it

Mixed Vegetables
  • Carrot, Beans, Peas, Capsicum - 2 cups
Cut these vegetables (carrot and beans-lengthwise) and pressure cook for 1 whistle

Paste
  • Onion - 2
  • Tomato - 4
Chop the onions and tomatoes.Grind onions separately with little water.Also grind tomatoes separately (no need to add water)
  • Ginger Garlic Paste - 1 teaspoon (optional)
Powders
  • Chilly Powder - 1 teaspoon (or more)
  • Coriander Powder - 1 teaspoon
  • Garam Masala Powder - 1 teaspoon
  • Salt - 1 to 11/2 teaspoons
Temper
  • Butter - 2 tablespoons
  • Cumin seeds - 1/2 teaspoon
  • Cloves - 2
  • Bayleaf - 1
  • Cardamom- 1
Garnish
  • Coriander leaves - few
Method
  • Melt butter in a pan and add cumin seeds.Allow it to splutter.
  • Now add the other items given under Tamper section.Leave it for 2 minutes
  • Add onion paste and pinch of turmeric.Let the raw smell diffuse (If you are using ginger garlic paste add it (at this stage and heat till the odor of the paste disappears)
  • Add tomato paste and after 3 minutes add the mixed vegetables
  • Add the powders and mix well.Leave it for sometime.
  • Add the mashed paneer and heat it for 5 minutes
  • Finally garnish with coriander leaves and mix well
