Milk Halwa / Milk Rava Kesari

Kesari - all time favorite and quickly to do recipe especially when we have guests at unexpected time
The procedure is very similar to the normal rava kesari but I substituted milk in the place of water.Since it involves milk didn't add Kesari Powder and the ghee consumption is also less


Ingredients

  • Semolina / Rava / Sooji - 1 cup
  • Milk - 3 cups
  • Sugar - 2 cups
  • Ghee - 4 tablespoons
  • Cashew - as needed
  • Saffron strands  - a pinch (soak it in 2 tablespoons of warm milk for about 10 minutes)
Method
  • First dry roast rava in simmer flame till it is slightly warm to touch.Take it out and keep it aside on a plate
  • Add a teaspoon of ghee to the kadai and roast cashew nuts and keep it aside
  • Now add 1/2 more teaspoon of ghee and fry rava till it becomes golden brown.It will emit nice aroma.Take it out and keep it aside

  • In the same kadai heat milk and when it starts boiling switch off the flame.Slowly add the roasted rava by stiring it continuously so that no lumps are formed
  • Mix well till the milk is absorbed by rava
  • Add sugar and mix well.Now switch on the stove and cook till the sugar is well dissolves
  • Add the remaining ghee and stir well
  • Put the roasted cashew nuts and saffron strands.Mix well.Switch off after 2 minutes

Serve it hot and enjoy this yummy lip smacking halwa
