Sweet Corn Pasta

Got this recipe from a "Cookery Show" in Jaya TV today evening and tried it out for dinner with a slight twist towards the end.It came out very well and hence delighted to share this recipe with you all
The original name is "Desi Pasta".Since it is cooked with sweet corn I renamed it as
"Sweet Corn Pasta"

Part 1 - Items to be Precooked
  • Macaroni pasta - 2 cups / 2 packets (I used Maggi Pazzta)
  • Sweet corn - 2 cups
Part 2 - Tomato Sauce
  • Butter - 2 teaspoons
  • Ginger garlic paste- 1 teaspoon
  • Chilly powder - 2 teaspoons
  • Tomato Puree - 1 cup (I used readymade one)
  • Salt - a pinch
Part 3 - White Sauce
  • Butter - 2 tablespoons
  • Maida - 2 tablespoons
  • Milk - 1 1/2 cups
  • Salt - 1/2 teaspoon
Part 4 - Garnishing or Topping
  • Taste maker - 2 small packets (the one which comes along with Macaroni packet)
Step 1 - Precooking Pasta
  • Boil 4 cups of water and pour it over pasta
  • Keep it covered for 5 minutes
  • Transfer it to a colander and drain the excess water
  • Show it under the running water for sometime.This prevents the pasta from sticking onto each other
  • Again drain it under a colander and keep it aside

Step 2 - Boiling Sweet Corn
  • Take sweet corn in a vessel and pour water just to immerse it
  • Boil it for 5 minutes in a medium flame
  • Drain off the excess water (Do not discard it you can use in soup preparation)
  • Keep the cooked corn aside

Step 3 - Preparation of Tomato Sauce
  • Melt butter in a pan and saute ginger garlic paste 
  • Put chilly powder and just swirl it once
  • Pour in the tomato puree and add salt
  • Allow it to boil till the raw smell of the tomatoes escapes.It will splutter here and there so be careful
  • Switch off the stove and keep it aside
Step 4 - Preparation of White Sauce
  • Melt butter in a kadai and fry maida in it
  • Switch off the stove and pour milk
  • Blend it with a whisk so that no lumps are formed
  • Switch on the stove and stir in a low flame.It will thicken automatically
Step 5 - Mixing 
  • Add precooked pasta and boiled sweetcorn along with salt.Mix well
  • Pour in the tomato sauce / extract and blend well
  • Garnish with the taste maker and cook for a minute
  • Be careful while adding salt because the taste maker contains some salt
  • The original recipe shows adding of shredded cheese and a pinch of oregano powder towards the end
