This is an exclusive "Vatha Kuzhambu" recipe which I learnt from a cookery show and ofcourse I have added my own touch to it.This kind of "Vatha Kuzhambu" is served along with Curd Rice in "Wedding Reception".That's the reason I tagged it under festivals

Ingredients
Part 1 - Seasoning
- Gingelly oil - 3 tablespoons
- Mustard seeds - 1 teaspoon
- Channa dhall + Urad dhall - 1/2 teaspoon each
- Methi seeds - 1/2 teaspoon
- Curry leaves - few
- Dried red chilly - 1 or 2
- Hing / Asafoetida - 1/4 teaspoon
- Manathakkali Vathal / Black night shade - 2 tablespoons
- Jaggery powder - as needed
Part 2 - Tamarind extract
- Tamarind - big lemon sized ball
- Luke warm water - 3 cups
- Crystal Salt - as needed
Soak tamarind in luke warm water for 15 minutes.Squeeze the pulp and extract juice add 1 more cup of water while doing so
Part 3 - Grinding
- Coconut pieces - 1/2 cup or less
- Vatha Kuzhambu Podi - 2 tablespoons
- Sambar Powder - 2 teaspoons

- In a mixer jar grind coconut pieces, vatha kuzhambu podi and sambar powder with little water to a thick paste.Keep it ready
- Heat oil in a kadai and splutter mustard seeds
- Add channa/ urad dhalls and fry till it is golden brown
- Add methi seeds, curry leaves, hing and red chilly.Saute it
- Add manathakkali vathal and fry in it till it turns golden brown
- Put jaggery powder and swirl it once
Step 3 - Vatha Kuzhambu
- Pour in the tamarind extract, add salt and allow it to boil in a medium flame for 5 minutes
- Add the "Paste" prepared in step 1.You may wash the mixer jar with little water and pour it here.Mix well
- Close the lid after 2 minutes and allow it to cook for another 5 minutes or so
- Open the lid and add few curry leaves before switching off the stove
