250th Post Special - Oats Mango Pudding

This is a very special post because its very obvious from the title
Now its peak summer and mangoes are available in plenty.So trying to make maximum use of it
Again it can be given to children as well as weight watchers.Make it accordingly as given in the recipe

Ingredients
Part 1 - Oats Porridge
  • Oats (dry roasted and powdered) - /21 cup
  • Skimmed / Full cream milk - 1 cup (boiled and cooled)


Part 2 - Mango Puree
  • Mango puree - 2 cups
I used Rasalu variety.You can use any sweet variety

Part 3 - Optional
  • Home made coconut milk - as required
  • Honey - little (topping)

Method
Step 1 - Porridge Preparation
  • Take powdered oats in a bowl.Pour milk and stir well without lumps.You may use a whisk wire

  • Transfer it into a pan and stir in a slow flame till it thickens.Add more milk while stiring.Let it cool.Make sure oats is cooked well

Step 2 - Mixing
  • Transfer the oats porridge in a mixing bowl

  • Add mango puree on top of it

  • Blend it with a whisk without lumps

  • At this stage itself you can refrigerate or add coconut milk as required.The consistency should be maintained thick ie you should be able to consume it with spoon.Mix well 
  • Refrigerate it for an hour atleast

Step 3 - Serving Oats Mango Pudding
  • Transfer it to small bowls and top it with honey if needed just before serving
