Now a days millets and its varieties like Millet Sevai, Millet Cornflakes, Cookies etc are easily available in organic / departmental stores
Millet Sevai is none other than vermicelli
Recently I got Kambu / Bajra sevai and I experimented with it and now Iam sharing this recipe with you all
You can try the same recipe with any other millet
Ingredients
Part 1 - Preparatory Items
- Millet Vermicelli / Semiya - 1 packet
- Boiled Veggies consisting of chopped potatoes, peas, beans - 2 cups
- Oil - 2 teaspoons
- Mustard seeds - 1 teaspoon
- Urad Dhal and Channa Dhal - 1/2 teaspoon each
- Curry leaves - few
- Green chillies - 3 or 4 (finely chopped)
- Ginger - small piece
- Onions - 2 nos (finely chopped)
- Carrot - 1 no: (grated)
- Salt - 1 1/2 teaspoons
Part 3 - Garnish
- Coriander leaves - little
- Lemon juice - 1 teaspoon (optional)
Method
Step 1 - Preparation
- Wash the sevai.Soak it in water for 5 minutes and then steam cook for 5 minutes
- Boil / pressure cook the chopped vegetables with a pinch of turmeric and salt
Step 2 - Millet Vegetable Sevai
- Heat oil in a kadai and season with mustard, channa / urad dhalls, curry leaves
- Saute ginger and green chillies
- Add onions and fry till golden brown
- Saute carrot with a pinch of salt
- Now add the cooked vegetables, salt required for the veggies and swirl it once
- Add steamed sevai / semiya / vermicelli now.Add salt and mix well.Keep it closed for 2 minutes
- Open the lid and add coriander leaves.Top it with lemon juice if needed
Serve with Simple Coconut Chutney
