சிறு தானியம் காய்கறி சேவை / Millet Vegetable Sevai / Millet Vegetable Noodles

Now a days millets and its varieties like Millet Sevai, Millet Cornflakes, Cookies etc are easily available in organic / departmental stores
Millet Sevai is none other than vermicelli
Recently I got Kambu / Bajra sevai and I experimented with it and now Iam sharing this recipe with you all
You can try the same recipe with any other millet


Ingredients
Part 1 - Preparatory Items
  • Millet Vermicelli / Semiya - 1 packet
  • Boiled Veggies consisting of chopped potatoes, peas, beans - 2 cups
Part 2 - Seasoning and Saute
  • Oil - 2 teaspoons
  • Mustard seeds - 1 teaspoon
  • Urad Dhal and Channa Dhal - 1/2 teaspoon each
  • Curry leaves - few
  • Green chillies - 3 or 4 (finely chopped)
  • Ginger - small piece
  • Onions - 2 nos (finely chopped)
  • Carrot - 1 no: (grated)
  • Salt - 1 1/2 teaspoons

Part 3 - Garnish
  • Coriander leaves - little
  • Lemon juice - 1 teaspoon (optional)
Method
Step 1 - Preparation
  • Wash the sevai.Soak it in water for 5 minutes and then steam cook for 5 minutes
  • Boil / pressure cook the chopped vegetables with a pinch of turmeric and salt
Step 2 - Millet Vegetable Sevai
  • Heat oil in a kadai and season with mustard, channa / urad dhalls, curry leaves
  • Saute ginger and green chillies
  • Add onions and fry till golden brown
  • Saute carrot with a pinch of salt
  • Now add the cooked vegetables, salt required for the veggies and swirl it once
  • Add steamed sevai / semiya / vermicelli now.Add salt and mix well.Keep it closed for 2 minutes
  • Open the lid and add coriander leaves.Top it with lemon juice if needed
