Ingredients
- Milk - 1 litre
- Sugar - 15 tablespoons or as required
- Saffron threads - few strands
- Milk - 1/4 litre
- Almond / Badam - 20 nos
- Kaju / Cashews - 20 nos
- Khus Khus - 1 tablespoon
- Basmathi rice - 1 tablespoon
Topping
- Chopped Kaju and Badam - 1 tablespoon
Step 1
- Boil 1/4 litre of milk.Allow it to cool
- Soak each and every item separately in milk (mentioned under batter) for at least an hour
- In the remaining milk soak the saffron threads
- Grind it together in a mixer. It should be a smooth paste.Refrigerate the paste
Step 2
- Boil 1 lite of milk
- Transfer to another vessel and stir it continuously for 20 minutes in a medium flame.Milk will be reduced to 3/4th now
- Lower the flame and add saffron threads dissolved in milk.Mix well
- After 2 minutes add the batter.At this stage pour little milk to the mixer jar and rinse out well.Add it to the kheer (This is to ensure that there is no wastage)
- Stir well for about 7 minutes so that the paste gets well infused in the kheer
- Now add sugar and stir till it gets dissolved
- Switch off the stove
- Top it with Kaju and Badam
