Part 1 - Pressure cooker
- Potato - 1/4 kg
- Oil - 1 tablespoon
- Mustard seeds - 1/2 teaspoon
- Cumin / Jeera seeds - 1/2 teaspoon
- Green chilly - 4 nos (slit open them)
- Ginger - little
- Cashews - 10 nos (optional)
- Onion - 1 medium sized
Salt - 1 teaspoon or more
Topping- Coriander leaves - few
- Lemon juice - 1 tablespoon (optional)
Step 1 - Boiling and mashing potatoes
- Wash potatoes well.Take them in a pressure pan.Pour water till they are immersed
- Pressure cook potatoes for 4 whistles.Once done cool and take out the potato peel
- Mash them nicely with a masher.You can also crumble them after mashing
- Heat oil in a kadai.Splutter mustard and jeera seeds.Put a pinch of turmeric
- Throw in green chillies, grated ginger and broken cashews.Fry till the cashews turn brown in colour
- Add thinly sliced onions and fry till the onions become golden brown
Step 3 - Aloo Subji
- Add mashed and crumbled potatoes.Put salt and mix well
- Finally add chopped coriander leaves.Mix thoroughly and switch off the stove
- Add lemon juice if desired and again mix well.
Aloo subji / podimass is ready.It goes well with Poori
