All time favorite!!! Its a quickly made dessert when some one gives a surprise visit or even a last minute sweet
- Semolina / Rava / Sooji - 1 cup
- Water - 2 cups
- Sugar - little more than 11/2 cups
- Ghee - 1/2 cup
- Cashew nuts - 10 number
- Kesari powder - a pinch
- Dry roast sooji in a pan till it is slightly hot to touch
- Heat a teaspoon of ghee and fry cashews.Take it out and keep it aside
- Add little more ghee and fry sooji till it emits nice aroma and becomes golden brown.Take it out and keep it aside
- In the same kadai heat water.Once it starts boiling slowly add the fried sooji by stiring it continuously so that no lumps are formed
- Cover it with a lid and allow the sooji to get cooked.It will take about 4 minutes
- Now add sugar and mix well till the sugar gets dissolved
- Pour the remaining ghee and stir well for 2 minutes
- Dissolve kesari powder in a tablespoon of water and add it to the above mixture and cook for 5 minutes
Hot Kesari is ready to serve
