Rava Kesari

All time favorite!!! Its a quickly made dessert when some one gives a surprise visit or even a last minute sweet

  • Semolina / Rava / Sooji - 1 cup
  • Water - 2 cups
  • Sugar - little more than 11/2 cups
  • Ghee - 1/2 cup
  • Cashew nuts - 10 number
  • Kesari powder - a pinch
  • Dry roast sooji in a pan till it is slightly hot to touch
  • Heat a teaspoon of ghee and fry cashews.Take it out and keep it aside
  • Add little more ghee and fry sooji till it emits nice aroma and becomes golden brown.Take it out and keep it aside
  • In the same kadai heat water.Once it starts boiling slowly add the fried sooji by stiring it continuously so that no lumps are formed
  • Cover it with a lid and allow the sooji to get cooked.It will take about 4 minutes
  • Now add sugar and mix well till the sugar gets dissolved
  • Pour the remaining ghee and stir well for 2 minutes
  • Dissolve kesari powder in a tablespoon of water and add it to the above mixture and cook for 5 minutes
  • Finally add the fried cashews and mix well.Switch off the stove

Hot Kesari is ready to serve
