Tiffin Sambar Version 2

Yet another accompaniment for Idly and Dosa.There is a slight twist here and see what it is....

Ingredients
Part 1 - Tadka and Vegetables
  • Oil - 2 teaspoons
  • Mustard and Cumin seeds - 1/2 teaspoon each
  • Hing - little
  • Turmeric - 1/4 teaspoon
  • Curry leaves - few
  • Drumstick - 1
  • Capsicum - 1
  • Carrot - 1
  • Brinjal - 1
  • Raw Banana - 1
Part 2 - Sambar Paste
  • Oil - 1 teaspoon
  • Red chillies - 3 or 4 nos
  • Hing - a pinch
  • Toor dhal - 1 tablespoon
  • Urad dhal - 1 tablespoon
  • Methi seeds - 1 teaspoon
  • Corriander seeds - 1/2 tablespoon
  • Onion - 1
  • Tomato - 1
  • Potukadalai / Roasted channa dhal - 2 tablespoons
Part 3 - Others
  • Tamarind - gooseberry sized 
  • Water - as required
  • Salt - 1 - 1 /2 teaspoons
  • Coriander leaves - few (finely chopped)
Method
Step 1 - Tamarind Extract and Sambar Paste Preparation
  • Soak tamarind in luke warm water for about 15 minutes.Extract the tamarind juice twice and discard the pulp
  • Heat a teaspoon of oil in a kadai and fry red chillies first.Spray hing
  • Add toor and urad dhal(s) and roast them to golden brown colour
  • Simmer the flame and fry methi and corainder seeds.Make sure they dont get burnt
  • Now add onions and fry them to golden brown colour
  • Put tomatoes ans saute them well
  • Switch off the stove and add potukadalai.Swirl it once
  • Allow the mixture to cool 
  • Grind it to a smooth paste using water

Step 2 - Tadka and Sauting Vegetables
  • Heat oil in a kadai.Splutter mustard and jeera seeds
  • Add hing, turmeric and curry leaves.Saute them once
  • Fry drumsticks first.Now add diced capsicum cubes and saute till it becomes soft
  • Put carrots (sliced roundly) and fry them
  • Now add chopped raw bananas and then brinjal pieces.Swirl it once

Step 3 - Sambar Preparation
  • Pour tamarind extract to the fried vegetables and boil till the raw smell of the tamarind goes
  • Dissolve sambar paste (prepared in step 1) in little water and add to it the above mixture
  • Add some more water to adjust the consistency
  • Put salt and mix well.Let it boil for 7 minutes
  • Add chopped coriander leaves before switching off the stove

Hot Tiffin Sambar is ready.Use it as a side dish for Idly and Dosa
