Sooji Kheer / Rava Payasam

Sooji Kheer is served along with "Dinner" as " Prasadam" daily in Jayarambati - the birth place of Holy Mother Sarada Devi
It is also served during Durga Pooja Festival in West Bengal

Ingredients
  • Milk - 1 litre or 8 cups
  • Sugar - 2 1/2 cups
  • Sooji / Rava - 1 cup
  • Ghee - 2 tablespoons
Method
  • Dry roast sooji in a kadai.Take it out
  • In the same kadai add ghee and roast sooji in ghee
  • Once done pour the milk along with sugar
  • Allow it to boil.Then simmer the flame and stir for 5 minutes.You will see the kheer becoming thick
  • Switch off the stove at this stage
  • Serve it warm
