Brown Bread and Dalia Uthappam / Cutlet

This fiber rich snack / tiffin item can be served to all age groups including diabetic people.When giving it to kids make sure to add ghee or butter
Learnt this recipe from a TV program.But it was shown with regular white bread and sooji. But I tried with Brown Bread and Broken Wheat Rava / Dalia

Part 1 - Soaking Items
  • Dalia / Broken wheat rava - 2 cups
  • Diet curd or full cream curd - 2 cups
  • Salt - 2 teaspoons
(use full cream curd for kids)

Part 2 - Vegetables
  • Carrot - 1 no: (medium sized)
  • Radish - 1 no: (medium sized)
  • Cabbage - 1/2 cup
  • Capsicum - 1 no: (medium sized)
Grate the above mentioned vegetables

  • Onion - 1 cup (finely chopped)
  • Peas - 1/4 cup (boiled and mashed)
  • Green chilly - 4 nos (finely chopped)
  • Ginger - small piece (grate it)
  • Coriander leaves - little (finely chopped)
Part 3 - Base
  • Brown bread - 15 slices
  • Oil / Ghee - for cooking
Remove the corners of the bread and cut into round shape with a help of a lid / mold

Step 1 - Soaking
  • Dry roast dalia for few minutes till the raw smell goes
  • Cool and grind it in a mixer.It should be like regular sooji consistency
  • Put curd and salt to it and mix well
  • Leave it for an hour
Step 2 - Base Spread
  • In a mixing bowl add grated carrot, cabbage, radish, capsicum and boiled peas
  • Slowly add the soaked dalia to it and mix well
  • Put finely chopped onions, green chillies, ginger and coriander leaves.Mix well again
  • Now the base spread is ready
Step 3 - Making Uthappams / Cutlets
  • Smear the bread slices with butter (optional - only for kids)
  • Apply the base spread using a bread knife over the round bread slices
  • Heat a tawa / pan.Put the coated bread slices carefully in the heated tawa.Make sure the coated side gets cooked first
  • Add few drops of oil / ghee (optional) around the bread slices.Cook in a medium flame for 3 minutes
  • Flip it carefully.You will be able to notice a nice brown crust as seen below in the pic
  • Turn it over once again after a minute and apply butter if serving it to kids.Otherwise skip this step
  • Take it after few seconds and serve hot with tomato ketchup
