After an extensive research study "The National Institute of Nutrition (ICMR) , Hyderabad " says this foxtail millet is highly rich in fiber, protein , calcium and minerals.Not only that it also helps to control blood sugar level and cholesterol.So this particular millet is essential for all age groups right from infants to oldies
Ingredients
Part 1 - Pressure cooker
But again we should cook accordingly depending upon the age group as follows:
- Give as porridge for infants
- Make yummy and delicious ghee rich ladoo so also chocolates for kids
- Can make dosai, idly, pongal and adai etc.for adults.Of course kids can relish too

Part 1 - Pressure cooker
- Foxtail millet / thinnai arisi - 2 cups
- Moong dhal - 1 cup
- Full fat / slim milk - 1/2 liter ie 4 cups
- Water - 4 cups
- Hing - 1/4 teaspoon
Foxtail millet / thinnai arisi looks grainy slightly yellowish in colour
Part 2 - Seasoning
Hot Thinnai Arisi Pongal is ready.Serve with any chutney of your choice and Tiffin Sambar and Arachivitta Vatha Kuzhambu
- Ghee - 1 tablespoon or more
- Pepper - 1/2 teaspoon
- Cumin sees / jeera - 1 teaspoon
- Green chilly - 1 (slited)
- Ginger - 1 small piece
- Curry leaves - few
Use more ghee for children
Part 3
- Salt - 2 teaspoons
Method
Step -1 Pressure cooker
- Dry fry foxtail millet in a simmer flame.Ensure raw smell goes off
- Once done take it out and keep it aside
- In the same kadai dry fry moong dhal till it emits nice aroma
- Transfer it to a pressure pan.Pour milk + water.Spray hing.Mix well.Pressure cook for 5 whistles
- Once done and the pressure is released.Take it out and mash well
Step - 2 Seasoning
- In the same kadai (used for dry roasting) melt ghee and add crushed pepper, cumin seeds.I used mortar and pestle
- Also saute ginger and curry leaves.Add the cooked pongal.Put salt dissolved in little water and mix well
Hot Thinnai Arisi Pongal is ready.Serve with any chutney of your choice and Tiffin Sambar and Arachivitta Vatha Kuzhambu
