Part 1
- Cashews - 100 g
- If you have refrigerated cashews microwave it for 40 seconds or slightly dry fry in a pan
- Once it cools take it in a mixer and grind it a fine powder
- Now transfer it to a cup
Part 2
- Cashew Powder - 1 cup
- Sugar - 1/2 - 3/4th cup
- Water - 1/2 the measure of sugar
- Ghee - 1 teaspoon (optional)
- Elachi / Cardamom powder - 1 pinch
Procedure
- Take sugar in a wide pan and pour water on it.Stir it for 2 minutes and then switch on the flame
- Let the sugar dissolve and the bubbles starts coming.Add little milk (about 2 tablespoons).The impurities will separate, filter it using a muslin cloth and pour the sugar syrup back to pan
- Switch on the stove and carefully look for one string consistency.When it is reached slowly add powdered cashews while stirring it continuously
- After sometime the mixture will emit bubbles and starts leaving the kadai slowly.Add ghee and pinch of elachi powder now
- Keep stiring and after 5 minutes take a small pinch using a spoon and see whether you can roll it like a ball without sticking
- If so then switch off the stove and keep stiring for 5 minutes
- When the mixture becomes warm take it out and knead like chapathi dough
- Now roll it out into a thin layer using a rolling pin
- Cut it diamond shapes using a greased knife
