This pulav is highly fiber rich and serves as a very good option for Diabetes and Weight Watchers

- Dalia - 1 cup
- Onion - 1 cup (finely chopped)
- Mixed Vegetables (potato, carrot, peas etc) - 1 cup
- Green chillies - 2 or 3
Pressure cook mixed vegetables for just 1 whistle.Reserve the cooked water
Part 3 - Seasoning
Part 4 - Others
Once done serve it hot with Onion Raitha- Oil - 1 tablespoon
- Cumin seeds / jeera - 1 teaspoon
- Bayleaf - 1
- Cinnamon stick - 1 small piece
- Cloves - 2
- Cardamom / elachi - 2
Part 4 - Others
- Mint and Coriander leaves - little
- Salt - 1 teaspoon
- Water - 1 1/2 cups
Method
Step 1- Dry roast
- Dry roast dalia for 10 minutes in a low flame.Make sure that the raw smell goes.Take it out and keep it aside
Step 2 - Seasoning and saute
- In the same kadai heat oil and season with ingredients mentioned under "Part 3"
- Add onions with a pinch of salt and saute it
- Add partly cooked vegetables, mint, coriander leaves and toss it once
Step 3 - Dalia Pulav
- Pour water and put salt.Let it boil
- Slowly sprinkle dry roasted dalia
- Mix it well and close the lid.Cook for about 15 - 20 minutes by stiring it occasionally
