Ghee Mysore Pak / Traditional Mysore Pak

This is a popular and a rich ghee sweet in South India.I have already explained
Chocolate Mysore Pak and Kaju Badam Mysore Pak.Here comes the traditional mysore pak recipe which is made out of melting butter / fresh ghee.Even though it looks hard from outside it melts in your mouth
So go ahead and give a try

Ingredients
  • Besan Flour - 1 cup / 200 g
  • Sugar - 2 cups / 400 g
  • Butter - 2 cups
The best way is to melt butter and do it

Method
Step 1 - Ghee Preparation
  • Take butter in a kadai and heat it in a medium flame
  • The butter will start melting and becomes frothy
  • Keep heating it till a clear liquid is formed
Step 2 - Two String Sugar Syrup
  • Keep heating ghee in one stove.Even if you use ready made ghee keep heating it
  • Take sugar in another kadai.Pour little water to just to immerse it
  • Heat it in a medium flame.Sugar will dissolve and starts forming bubbles
  • After sometime the solution will be clear

Step 3 - Mysore Pak Preparation
  • Switch off the flame and add the besan flour slowly
  • Stir it without any lumps. You may use a whisk to do so
  • Now add 1 ladle of ghee and mix well.Once it is absorbed add another ladle of ghee.Repeat this process till the ghee is exhausted
  • You should add ghee at frequent intervals. The colour will change once you start adding ghee
  • Keep stirring it.Initially big bubbles will formed
  • After sometime the mixture starts getting porous and starts leaving the sides of the kadai
  • Once the entire mixture comes together without sticking it to kadai switch off the stove
  • See the pics below

Step 3 - Mysore Pak Pieces
  • Transfer the above mixture into a greased tray
  • Allow it to become warm and cut into desired shapes

Now "Mouth Melting Ghee Mysore Pak" is ready
