Rajma Masala

This is perfect side dish for Rotis and Jeera Rice


Ingredients
Part 1 -Pressure Cooker
  • Rajma - 1 cup

Part 2 - Tadka / Seasoning
  • Butter - 1 tablespoon
  • Cumin seeds - 1 tablespoon
  • Green Chilly - 4 (Slit)
  • Ginger - a small piece
  • Garlic - 8 nos (finely chopped)

Part 3- Masala / Spices
  • Coriander Powder - 2 teaspoons
  • Kashmiri Chilly Powder - 1 teaspoon
  • Garam Masala Powder - 1 teaspoon or little more
  • Turmeric Powder - 1/2 teaspoon
  • Salt - 1 1/2 teaspoons
Part 4 -  Others
  • Onion - 2 nos (finely chopped)
  • Tomato - 3 nos (finely chopped)
Part 5 - Garnish
  • Kasuri Methi - 1 tablespoon
  • Coriander leaves - 1 tablesppon
  • Lemon Juice - 1/2 lemon (optional)
Method
Step 1 - Pressure Cooking
  • Wash and soak Rajma overnight ie at least for 8 hours
  • Add some more water to immerse Rajma and pressure cook for 8 whistles
  • Take it out and smash using Pav Bhaji masher (optional)

Step 2 - Seasoning / Tadka
  • Melt butter and season with cumin seeds
  • Saute ginger and garlic in it
  • Fry green chillies in it
  • Switch off the flame and add all spice powders given under "Part 3" except salt
Step 3- Rajma
  • Add onions and saute it well
  • Throw in chopped tomatoes and fry till it becomes soft
  • Add in boiled and mashed rajma along with the water
  • Put salt and let it boil
Step 4 -Garnish
  • Garnish with coriander leaves
  • Add crushed kasuri methi leaves  and swtich off the stove
  • Squeeze lemon if needed
Top it with butter before serving with rotis
