Pachratan Dal / Panchmela Dal

As the name says this recipe is made from 5 types of Dal and it is rich in protein.This is popularly served in Rajasthani Cusines


Ingredients
Part 1 - Soaking and Pressure Cooking
  • Green Moong Dal - 1/4 cup
  • Masoor Dal - 1/4 cup
  • Toor Dal - 1/4 cup
  • Broken or Whole Urad Dal - 1/4 cup
  • Channa Dal - 1/4 cup

Part 2 - Tadka
  • Oil - 1 tablespoon
  • Cumin seeds / Jeera - 1 teaspoon
  • Bay Leaf - 1
  • Green Chilly - 2 (slit)
  • Hing - 1/4 teaspoon

Part 3 - Paste
  • Tomato - 2 or 3 nos
  • Ginger - little
Part 4 - Powders
  • Coriander Powder - 1 teaspoon
  • Garam Masala Powder - 1/4 teaspoon
  • Kashmiri Chilly Powder - 2 teaspoons
  • Salt - 1 1/2 teaspoons
Part 5 - Freshly Made Garam Masala
  • Black Pepper - 5
  • Cardamom - 2 nos
  • Cloves - 3 nos
Part 6 - Seasoning and Garnishing
  • Ghee - 1 teaspoon
  • Red Chilly Powder - 1/2 teaspoon
  • Curry Leaves - little
  • Coriander Leaves - little
  • Lemon  juice - 2 teaspoons
Preparation
  • Wash and Soak the dals together for atleast 20 minutes
  • Dals would absorb water and gets swollen up
  • Grind tomatoes and ginger to a fine paste without adding water
  • Roughly crush pepper, cardamom and cloves in a mortor and pestle


Method
Step 1 - Pressure Cooking
  • Add 1/2 cup of water to soaked dals
  • Put 1/2 teaspoon of turmeric and pressure cook for 3 whistles
  • Once done mash it well

Step 2 - Tadka
  • Heat oil in a kadai and season with jeera, bay leaf, hing and green chillies
  • Pour the tomato paste and cook till the raw smell disappears
  • Put the spice powders now ie garam masala, coriander and kashmiri chilly powders and mix well
  • Also add hand crushed garam masala

Step 3 - Panchratna Dal
  • Add the boiled and mashed dal.Pour water and mix well
  • Put salt and let it boil for 5 minutes
  • Switch off the stove and add lemon juice
Step 4 - Seasoning and Garnish
  • In a small ladle heat ghee and season with re chilly powder and curry leaves
  • Pour the seasonings over the cooked dal
  • Garnish with coriander leaves

Pachratan Dal / Panchmela Dal is ready to be served with Rotis , Jeera Rice
