சிவப்பு அரிசிக் குழி பணியாரம் / Red Rice Kuzhi Paniyaram

Kuzhi Paniyaram is a popular chettinad snack item.It can be wither fried or made in molds .The previous post explains how "Red Rice Kuzhi Paniyaram Batter" is made.Now lets see how this particular snack / tiffin is made

Ingredients
  • Kuzhipaniyaram batter - 1 bowl or more
  • Oil - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Curry leaves - little
  • Ginger - little
  • Channa dhal - 1/2 teaspoon
  • Green chillies - 3 or more
  • Small onions - 15 nos
  • Salt - as needed
  • Kuzhi Paniyaram Mold
  • Oil / ghee / butter - for making paniyarams

Method
Step 1 - Seasoning and Saute
  • Heat oil in a pan splutter mustard seeds.Season with curry leaves, channa dhal, ginger, green chillies
  • Add small onions (chopped) and saute it with pinch of salt
Step - 2- Mixing
  • Add the above seasonings batter and mix well
  • Add salt and mix well.Be careful while adding salt because the batter contains salt already

Step 3 - Making Kuzhi Paniyaram
  • Heat a paniyaram pan and add 1/2 teaspoon of oil in each and every mold.Use ghee / butter for children
  • Pour the batter using a small ladle / spoon in each and every mold
  • Close the paniyaram pan and wait for 3 - 5minutes
  • Flip the paniyaram in each and every mold with the help of the stick / rod (that comes along with paniyaram pan)
  • Allow the other side to get cooked.No need to close the pan now.Take it out after 3 minutes

Red Rice Kuzhi Paniyaram is ready.Serve it with Coconut Chutney / Mint Chutney and hot filter coffee
