பூந்தி லட்டு / Boondhi Laddu / बूंदी लड्डू

"Laddu / Boondhi Laddu" is the most favourite sweets for all of us.It is one of the items relished during Diwali season so also in many occasions like Weddings and other house hold functions



Here comes the interesting recipe for making "Laddu"

Ingredients
Part 1 - Boondhi
  • Besan flour - 1 cup
  • Turmeric powder - little
  • Oil - for deep frying
  • Perforated ladle / Boondhi Jarani - for dropping boondhis
Part 2 - Sugar Syrup and Garnish
  • Sugar - 1 to 1 1/2 cups
  • Cardamom powder - a pinch
  • Cashews - as needed (broken)
  • Clove - 2 or 3 (optional)

Method
Step 1 - Making Boondhis
  • Take besan in a bowl.Put a pinch of turmeric in it.Add water gradually to make a slightly thin batter
  • Heat oil in a deep frying kadai
  • Hold the perforated ladle above the heated oil
  • Take a ladle full of batter and pour it over the perforated ladle and spread it
  • You will notice tiny balls falling into the oil
  • Fry well till the oil sound subsides.Take it out carefully and drain the excess oil over a colander
  • Let the boondhis cool
  • Repeat the process till the batter is exhausted
Wash and wipe the Jarani / Perforated ladle after each and every batch


Step 2 - Sugar Syrup and Laddus
  • Take sugar in a kadai.Pour water to immerse the contents and start heating it in a medium flame
  • Sugar will dissolve and bubbles will be formed
  • After sometime look out for one string sugar syrup
  • Dip a flat surface ladle / spatula into the sugar syrup and drop it onto a spoon / cup.Wet your fore finger and touch the syrup and then touch your fore finger and thumb together and pull it apart.You will be able see unbreakable single thread
  • To this add cardamom powder
  • Put the fried boondhis in the syrup
  • Also add cloves and broken cashews in it
  • When it is hot to touch , grease your palms with ghee and make nice small balls
  • Laddus are ready to be consumed
