Ingredients
Part 1 - Dry roast and grind
- Kollu / Horsegram / Mudhira / Uluvalu / Kulthi - 1/2 cup
- Coriander seeds - 1 tablespoon
- Red Chilly - 6
- Grated Coconut - 1/2 cup
Part 2 - Seasoning and Saute
- Mustard seeds - 1 teaspoon
- Urad / Channa dhal - 1/2 teaspoon each
- Curry leaves - little
- Methi seeds - 1 teaspoon
- Small Onions - 20 nos
Part 3 - Tamarind Extract
- Tamarind - small lemon sized ball
- Water - 2 cups
- Jaggery - small piece
- Salt - 1 1/2 teaspoons
Part 4 - Garnish
- Curry leaves - few
Method
Step 1 - Tamarind Extract
- Soak tamarind in water for about 20 minutes
Step 2 - Dry roast and powder
- Dry fry kollu in a kadai for about 5 minutes.It will emit nice aroma.Take it out and cool
- In the same kadai dry roast red chikkies and coriander seeds
- Switch off the kadai and swirl the coconut in the same kadai
- Grind the kollu, coriander seeds and red chillies alone
Step 3 - Seasoning and Saute
- Heat gingelly oil in a kadai.Crackle mustard seeds, fry urad/channa dhals
- Sprinkle hing and add methi seeds
- Put small onions and saute it
Step 4 - Kuzhambu
- Add the roasted and ground powder.Saute it once
- Pour the tamarind extract.Put salt and let it boil for 5 minutes
- Add jaggery and let it boil for some more time
Step 5 - Coconut paste
- Meanwhile grind coconut with little water to a thick paste
- Pour it over the cooked kuzhambu and switch off the stove
- Garnish with cut curry leaves
Serving
- Serve with steaming hot rice and a spicy curry
