Oil Free Brinjal Curry


Iam a big fan of Kathrikai Roast.Ofcourse it consumes more oil.But I wanted to try a new recipe without adding a drop of oil.It turned out well.

Ingredients

Small Brinjal - 1/4 kg (Wash it and cut into thin slices)
Big Onion - 1 (Chop it into small pieces)
Turmeric - A Generous Pinch
Cocount Powder - 1 Tea Spoon
Dosai Milagai Powder - 1 Teaspoon
Salt - 1 1/2 Teaspoons
Water - arounnd 2 tumblers (this is used instead of oil)




Method
  • Heat around 1/2 Tumbler of water
  • Add chopped onions and Turmetic powder to it.Heat for around 2 minutes
  • Now add the sliced Brinjal(s) and 1 tumbler of water
  • Close it with a lid for 3 minutes
  • In the remaining water dissolve the Cocount Powder and Dosai Milagai Powder and mix well (Note: It will not be a clear solution)
  • Pour it into the Brinjal and mix well.Close it and cook for 4 minutes.
  • Finally add Salt and mix well
  • Oil free Brinjal is ready and it can be used as a side dish for Rasam rice
