I got this recipe from a book but it was explained with ordinary rava I replaced it millet rava.It came out well.Use oil for adults, butter or ghee for kids while making uthappams

- Proso millet rava (Panivaragu / Barri) - 1 cup.You can use any millet
- Oats - 1 cup
- Sour curd - to soak
- Toor Dhal - 1/2 cup

- Onion - 2 nos (finely chopped)
- Carrot - 3 nos (grated)
- Green chillies - 2 or 3 (finely chopped)
- Coriander leaves - little
- Salt - 3/4 teaspoon
- Oil / Butter / Ghee - for making uthappams
Step 1 - Soaking and Grinding
- Whip curds and soak millet rava and oats in it for 5 hours
- Soak toor dhal separetly in water for 2 hours
- Strain water from toor dhal and grind it to a smooth paste (using the drained water + some more fresh water)
- Add soaked millet rava and oats and grind it to a smooth batter by sprinkling water now and then
- No need to ferment this batter
- Add onions, carrot, green chillies and coriander leaves.Put salt and mix well
- Heat a tawa and rub it with little oil
- Pour a ladle of batter on the center of tawa and spread it in a circular motion using back side of ladle
- Add 1/2 teaspoon of oil around the edges.Use ghee or butter for kids
- After 3 minutes carefully tun on to the other side using dosai thiripi
- Allow it to cook on other side also
- Now hot uthappam is ready.Serve with Carrot Coriander Thogayal / any other chutney.You may spread butter while giving it to kids
