Ribbon Pakoda / Ola Pakoda / Nada

This is one of the snacks made during Diwali in many South Indian households


Ingredients
Part 1 - Grinding
  • Raw Rice - 1 cup
  • Red Chilly Powder - 2 teaspoons
  • Cumin Seeds - 1 teaspoon
  • Hing - 1/4 teaspoon
  • Salt - 1 teaspoon


Part 2 - Mixing
  • Potukadalai / Fried Gram Dhal - 1/2 cup
  • Ghee - 2 tablespoons
Method
Part 1 - Soaking and Grinding
  • Soak rice for an hour
  • Drain the water from it and keep it aside
  • Take the drained rice in a mixer.Add chilly powder, jeera, hing and salt while grinding
  • It should be like a thick dosa batter
Part 2 - Mixing
  • Add potukadalai powder to the batter and make it like a roti dough
  • Coat it ghee and knead it well
Part 3 - Ribbon Pakoda
  • Use the achu with parallel lines as seen in the pic
  • Heat oil in a deep frying pan
  • Fill the murukku press dough and squeeze it in a circular motion in the hot oil
  • Wait till the bubbles subsides and turn over to the other side
  • Take it out after 2 minutes and drain it under colander
  • Once cooled break it into small pieces
  • Enjoy it with a cup of hot chai
