Kalkandu Vadai / Rocky Candy Patties

This snack/sweet is an authentic Chettinad recipe which I learnt it from a TV show.I tried it out immediately and it turned out well.The preparation is similar to medhu vada.
This Vadai can be used for Neivedhyam also


Ingredients
  • Urad Dhall - 1/2 cup
  • Raw Rice - handful (optional - I added it to give crispiness)
  • Powdered Kalkandu or Rocky Candy - 1/2 cup - 3/4 cup
  • Rava or Rice Flour - little
Method
  • Soak urad dhall and raw rice separately for 1 hour

  • After an hour urad dhall would be swollen as seen in the picture.Refrigerate the swollen urad dhall for 1/2 hour
  • Grind urad dhall and rice together (drain water from rice).Do not add water while grinding.Mix kalkandu/ rocky candy powder with the batter
  •  Add rice flour or rava if the batter is watery. Also rava will retain the crispiness
  •  Smear your palms with oil and make a ball from the batter.Flatten it on your palm and put a hole in the center
  • Heat oil in low flame.Drop a marble sized ball in the oil and check whether the oil is heated
  • Deep fry the vadas and cook till it is golden brown on both the sides

  • Place the fried vadas under a colander to drain the excess oil and also squeeze out the oil using tissue paper

 Kalkandu Vadai / Rocky Candy Patties are ready.Serve it hot......

Tip

When the batter is dropped into the oil you will notice the bubbles sound.After sometime the sound will subside.This is the point when you can make sure that the vada is fully cooked and it will be brown
