Mixed Vegetables Pasta (or) Pasta Upma

This dish is indeed yummy and healthy.....It does not require cheese at all...I got this idea from my friend and did modifications according to my taste

Cooking of this pasta is similar to upma cooking and hence the name


Ingredients

Preparation of Macaroni

Macaroni Pasta - 2 cups

Boil water in a big big vessel with few drops of oil.Add Pasta and cook it in low flame for 5 minutes.Drain the pasta under colander and show it under running water so that pasta will not stick to each other

  • Nutralite Butter (cholesterol free) or Margarine (butter substitute) - 2 table spoon (can also use ordinary butter)
  • Mustard Seeds- 1/2 teaspoon
  • Onion - 1(finely chopped)
  • Tomatoes - 1 or 2 (finely chopped)
  • Green Peas (Fresh or Frozen)- Handful or more
  • Mixed Vegetables (Beans, Carrot, Capsicum) - 1 1/2 cups
  • Pepper Powder - 1 teaspoon or more
  • Jeera Powder - 1 teaspoon or more
  • Salt - 1 to 11/2 teaspoons
  • Coriander Leaves (chopped) - For Garnish
  • Tomato Sauce - for the topping

Method
  • Melt butter and temper with the mustard seeds.Add onions and fry it for sometime and add peas.Allow it to cook
  •  Add finely chopped tomatoes and fry for 3 minutes

  • Now add the mixed vegetables and a pinch of turmeric (optional) and sprinkle little water and cook for 5 minutes in low flame (make sure it doesn't get burnt).At this stage it will be half cooked add pepper and jeera powders and salt to it and mix well.Again cook for 3-5 minutes in a low flame.Keep sprinkling water every now and then if needed (or) microwave the veggies with pepper and jeera powder separately add it to fried onions and tomatoes

  • Finally add the cooked pasta and blend it well with the cooked vegetables.Leave it for 3 minutes

Serving:
  • While serving the pasta you may sprinkle some more pepper on top of it, garnish with little coriander leaves and also add tomato sauce.It will be very tasty
  • You may also add grated cheese before serving
Variations
  •  Instead of pepper and jeera powder you may use 1 teaspoon of garam masala, 1/2 teaspoon of chilly powder and 1/2 teaspoon of coriander powder
